It's Time for Cookie-Mas

Please know that I mean no disrespect for the Baby Jesus when I say, "It's time for Cookie-Mas." If I were the Son of God--which I am not--I would be thrilled if people all over the world would celebrate my birthday by baking piles and piles of yummy cookies. As a matter of fact, my birthday is July 26, and if you would like to celebrate it with cookies, well, I fully endorse this plan. As a matter of fact, I expect to be compensated with homemade cookies just for thinking of the brilliant idea.

Today I made Yummy Almond Butter Cookies. My dear husband, DandeDave, may possibly be allergic to peanut butter. Or, he could be just being difficult. Sometimes it's hard to tell the difference. At this time of year, he misses out on all the chocolatey/peanut buttery wonderfulness of the season. Because I love him a whole big lot, I have attempted to make some recipes that are normally peanut buttery with almond butter or other nut butters. I have another super great idea in mind that involves Cashew Nut Butter Fudge. I'll let you know if it works out. I'm just full of brilliance today.

The recipe for Yummy Almond Butter Cookies is posted below. If you like almonds, you'll LOVE these. If you don't want the chocolate, you can make the recipe up to the point where you form the cookies, flatten them like Peanut Butter Criss-Crosses, and bake them accordingly. Or you can flatten them and press some sliced almonds into the top. Bake them for an additional minute or two for a total of 8-9 minutes, or until golden brown. They're delicious no matter which variation you pick.
