
1/2 cup butter
3/4 cup almond butter (In the past I have also used chunky)
1 1/4 cup brown sugar
1 egg
1 tbsp vanilla
1 3/4 cups all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
sanding sugar
unwrapped Hershey kisses
Cream together butter, almond butter, and sugar. Add egg and flavoring, mix until creamy and light colored. Add dry ingredients. Form into scant tablespoon sized balls. Roll each ball in sugar and place on parchment lined cookie sheet about 2 in apart. . Bake at 375 degrees F for about 7 minutes. Remove from oven and top each cookie with a Hershey kiss, pressing down gently. It's okay if the cookies crack slightly. Return to the oven for 1-2 minutes. Cool on wire racks. Makes about 3.5 dozen cookies.
