Spinach Salad with Hot Bacon Dressing

Spinach Salad with Homemade Hot Bacon Dressing
Ingredients:
• 8 cups fresh baby spinach, rinsed and drained
• 1 cup sliced mushrooms
• ½ of a medium red onion, sliced very thinly
• ½ cup grape tomatoes, cut into halves
• 4 slices thick cut peppered bacon, diced
• 2 tbsp. reserved bacon drippings
• 1/3 cup sugar
• 2 tbsp. dijon mustard
• ½ cup cider vinegar or white balsamic vinegar

Directions:
1. Combine spinach, mushrooms, onion, and tomatoes in a large salad bowl.
2. In a skillet over medium heat, cook the bacon until crisp. Add the bacon to the salad bowl, and reserve about 2 tbsp. of the drippings in the skillet for the hot bacon dressing.
3. Re-heat the reserved drippings over medium heat. Add the sugar and mustard, stirring until the sugar melts and begins to caramelize.
4. Carefully add the vinegar, stirring to combine. Cook until the mixture is hot and bubbly. Serve hot dressing over spinach salad. Serves 4.
