Filet Mignon with Sauteed Mushrooms and Onions
Ingredients:
• 4-6 oz. of center cut filet mignon for each person
• 2 tbsp. butter
• ½ of a sweet onion, sliced
• 1 cup sliced cremini mushrooms, or other mushrooms of your choice
• Garlic butter to finish (see recipe for Cheddar Garlic Biscuits)
Directions:
1. Preheat oven to 400 degrees F.
2. Melt butter in large, heavy skillet.
3. Saute onions and mushrooms in butter until soft and transluscent over medium heat, adding salt and pepper to taste. Remove vegetables and reserve.
4. Season steaks with salt and pepper to taste, and brown all sides in the remaining butter in the same skillet over high heat, at least 3 minutes per side, or longer if desired.
5. Return vegetables to the skillet, if oven-proof, and place in 400 degree F oven for 20 minutes for medium doneness, or longer if desired. Everything can also be transferred to an ovenproof casserole dish.
6. Finish steaks by melting a dollop of garlic butter over each steak. Serve with mushrooms and onions.
