Oven Roasted Yukon Gold Potatoes
Ingredients:
• 2 lbs. Yukon Gold potatoes, washed and cut into 1 inch cubes
• 2 tsp. minced prepared garlic
• 2 tbsp. extra virgin olive oil
• 1 tsp. coarse salt
• ½ tsp coarse pepper
Directions:
1. Preheat oven to 400 degrees F.
2. Line a shallow large baking sheet with heavy foil and spray well with cooking spray.
3. Combine cubed potatoes and garlic in the baking sheet. Drizzle well with oil. Season with salt and pepper.
4. Roast in the 400 degree F oven for 50-60 minutes, until nicely browned, stirring halfway through the roasting time. Serves 4-6. In the summer, we do the same thing in a foil pouch over a hot grill for 30-40 minutes. Yum!
