Oven Roasted Baby Artichokes
Ingredients:
• 12-16 fresh baby artichokes, trimmed and prepped.
• 2 tsp. minced prepared garlic
• 2 tbsp. extra virgin olive oil
• 1 tbsp. lemon juice
• 1 tsp. coarse salt
• ½ tsp. coarse pepper
Note: trimmed artichokes can be held in water with lemon juice and then drained when ready to assemble.
Directions:
1. Preheat oven to 400 degrees F.
2. Lightly spray a small oven-proof dish.
3. Combine artichokes and garlic in the prepared dish.
4. Lightly toss artichokes and garlic with oil and lemon juice.
5. Season with salt and pepper.
6. Roast in 400 degree oven for 20 minutes, until tender and slightly caramelized. Serves 4.
