Hibachi-Style Mixed Vegetables





Ingredients:

2 tbsp. sunflower, canola, grapeseed, or other oil with a high-smoke point
2 medium zucchini, cut in bite-sized cubes
1 large onion, quartered and sliced thickly
1 pkg sliced mushrooms, about 5 oz.
Salt and pepper to taste
1 tbsp. butter
1-2 tsp. soy sauce, or to taste





Heat the oil on the grilling surface over medium-high heat. Add vegetables and season with salt and pepper. Grill, turning frequently, until the onions are translucent and the zucchini is tender and lightly browned. Toss in the butter and soy sauce, cooking until the soy sauce begins to caramelize. Remove from heat and keep warm until ready to serve. Serves 4.
