Recipe for the glaze (enough for a large package of chicken breasts-- I get the giant discount packages with 7-8 in them):
- 1 cup peach jam (I used homemade!)
- 1 small jalapeno pepper, minced
- 1 clove garlic, minced 2 tbsp stone ground mustard
- 2 tbsp soy sauce
Grill chicken until juices run clear. Brush with sauce, turn, grill for about 2 minutes on each side or so, just until the sauce begins to caramelize, but be careful not to let it burn.
