Blackberry Cobbler


Ingredients:

  • 2 cups of blackberries, rinsed and gently patted dry
  • 1/2 cup butter, melted
  • 1 cup sugar plus 1/4 cup for sprinkling on top
  • 1 cup all-purpose flour
  • 1 tsp baking powder.
  • 1 cup milk
  • 1 tsp vanilla

Directions:

  1. Preheat the oven to 350 degrees F. Butter an oval baking dish.
  2. Melt the butter.
  3. Combine flour, baking powder, and sugar in a mixing bowl.
  4. Whisk in vanilla, milk, and melted butter until smooth and combined thoroughly.
  5. Pour batter into buttered dish. Place berries over the top of the batter, distributing evenly.
  6. Sprinkle remaining 1/4 cup of sugar over the berries.
  7. Bake for 1 hour or until golden and bubbly. Makes about 6 servings.
